We grow a lot of corn on our homestead and our best baked corn casserole is just the recipe to taste our homegrown corn. The best part about it is that it’s gluten free! We are all about living clean around here and that includes our bodies.
As most of you know we also favor a high protein low-carb diet. While corn is not low in carbohydrates when you pair it with a great piece of grilled chicken, it all balances out in the end.
We’ve been making this recipe for about 8 years now. A dear friend shared her recipe and then we modified to make it our own. This dish can be served as an appetizer or the main dish. When you place this corn casserole over grilled chicken it’s a great main course, when you shred chicken and incorporate it into the corn casserole it’s a great dip for chips.
This best baked corn casserole is our small group favorite and any time we cook it people want this recipe!
Now if you are watching calories, it’s not that great. The butter and cream cheese see to that! But once you’ve tasted this mouth watering corn casserole you won’t eat corn any other way!

The part that makes this corn casserole gluten free is the salsa.
If you purchase a salsa with gluten, this recipe will no longer meet your dietary restrictions. We use either a homemade salsa or a market fresh salsa in the produce section of our supermarket.
