One of our family’s all time favorite recipes is gluten free chicken pot pie.
We love cooking with fresh food and fresh ingredients in our home. I’ve taught my girls to make this dish and if they can cook it, so can you! There’s nothing more fulfilling than a wholesome meal cooked from scratch and great conversation at the dinner table.
This gluten free chicken pot pie casserole is a comfort food to say the least. Filled with farm fresh veggies of all sorts. Peas, carrots, green beans, corn and onions! Combined with a free range, juicy, high protein chicken it’s sure to hit the spot and give you energy. I serve it with a salad on the side with a light dressing. If you aren’t a salad lover another good side dish is a baked sweet potato.
It’s not a quick dish, so allow yourself some time to put it together. If you don’t have a lot of time to dedicate, one way I save time is to put the meat and veggies in the crock-pot. Put it on low in the morning before work and when you get home, this part will be finished cooking before you even you start 🙂
This casserole is also great for small groups, a dinner for a sick family, or even for a freezer meal. Often times, I make a double batch. One for dinner and one for the freezer for when I’m pooped!
